Classic Iced Cookie Recipe
St.Ptrick's Day Lucky Clover Iced Cookies
Cookie Ingredients
- 150 gm Butter (softened)
- 1 cup White Castor Sugar
- 2 Eggs
- 1 tsp Vanilla Essence
- 2 1/2 cups Plain White Flour
- 3/4 tsp Baking Powder
Icing Ingredients
- 1 Egg White
- 1 2/3 cups White Powdered Icing Sugar
- 1 tsp Lemon Juice
- 3/4 tsp Baking Powder
Cookie Method
Line two baking trays with your Horoeka House Silicone Baking Tray Liners
Preheat oven to 160°C
Beat together the butter and sugar until pale and fluffy
Now beat in eggs one at a time
Add the vanilla and beat in
Sift the flour and baking powder together
Stir the flour and baking powder into the butter and sugar mix until a soft dough forms
Cover dough and chill in the fridge for a minimum of 30 minutes
Cut into the desired shape using your Horoeka House Cookie Cutters
Transfer the biscuits to baking trays lined with a Reusable Horoeka House Silicone Baking Tray Liner and bake for 10-12 minutes until they are a light golden brown colour
Allow the biscuits to cool completely before icing
Icing Method
Separate the egg white from the yoke using your Horoeka House Egg White Sepqartor
Whisk the egg white with an electric beater until it has formed a soft peak
Gradually add the icing sugar to the whisked egg white
Add the lemon juice
Beat the mixture at a high speed until the icing is light, fluffy, and glossy thick
Separate icing into individual batches depending on the number of different colours you require

Make The Occasion Even More Special With An Irish Coffee
Irish Coffee Recipe
- 1 cup of your favourite freshly brewed coffee
- 1 tbsp brown sugar
- Lightly whipped cream
- 3 tbsp of your favourite whiskey
Fill a large coffee mug (a glass or footed one if you have it) with your freshly brewed hot coffee to approxnately the 3/4 level
Stir in the brown sugar to taste
Stir in the whiskey. If you are making a non-alcholhic version use whiskey or rum esscence instead of the actaul whiskey
Top with whipped cream
